This is wonderful. I love all of the details, such as the saw almost hidden in the background. With such an old world practice, it’s a shame to see the modern digital weight scale. No one can make ham like the French and Spaniards, wish I was there!
I first draw some sketchy lines to get the scene right with a fine pencil H 0.5mm. Then I make the real drawing with edding profipen 0.3 (waterproof ink). On the adjacent page I quickly redraw the scene using a fountain pen, to define shades and note colours. This all on location.
Later, in this case the next day, I painted it with watercolour, based on the notes. Sometimes I take a photograph for reference, but I seldom use it.
And I agree on the taste of the meat.

Yes, French occasionally eat horsemeat, but they tell me it’s getting less common. It tastes a bit sweet. Thanks for your comments.

nice sketch. Can i ask what you used? I have had horse in France, its quite pointless. Bit like snails…

thanks for telling us your process – I like the idea of drawing the values and other notes on the adjacent page. I’ll try that.
